Sometimes all you need is a classic comfort food dish that reminds you of Christmas time.
Soak 1 cup of cashews overnight.
Chop up some
Sauté tempeh pieces in coconut oil and set them aside.
Sauté onion in coconut oil for a few minutes.
Add 3 tbsp flour and cook for another minute.
Now gradually add the following:
- 1 cup veggie broth
- 2 tbsp tamari or coconut aminos
- 1 tbsp tomato paste
- 1 tsp lemon juice
Give it a good stir for about 5 minutes and then add the mushrooms & some thyme and cook for another 5 minutes.
Now its time to create the heavy cream by blending:
- soaked and rinsed cashews
- 1/2 cup water
- 1 tbsp lemon juice
- 1 tbsp nutritional yeast
- pinch salt
After mixing everything carefully together, add the tempeh and if you want some parsley.
