The Lentil Salad is the ultimate spring salad because it’s all about the freshness. You can serve it at a bbq or as an appetizer at a party.
Together with the crunchy little lentils and the rich and sweet dressing, this salad is hearty and light.
Chop up the vegetables:
- bell pepper
- spring onion
Blend the dressing:
- sherry vinegar or balsamic
- olive oil (or walnut oil)
- agave syrup
- clove garlic
Cook lentils around 15 min, toss in the boiling water some herbs like rosmarin, oregano, thyme, tarragon.
And now get a big spoon and combine the colorful salad!
