A snack, hours d’oeuvre, flying buffet? Whatever this it, its healthy and yummy!
Start by roasting red peeper in the oven. Preheat oven to 450 degree. Place them on a baking sheet, cut in half, inner side pointing the sheet. Check after 30-40 min if they are wrinkly, if so, take them out and aside until they are cooled down to remove the peel.
Make the hummus in a blender:
- 1 cup cooked chickpeas
- roasted red pepper
- 2 garlic gloves
- 3 tbsp tahini
- 3 tbsp lemon juice
- 1 tsp smoked paprika
- salt + pepper
Peel the cucumber, slice it, hollow them (with a spoon or melon baller).
Now fill them with the hummus by adding the sauce to a ziploc bag and cut off one end. Dust the top with smoked paprika or some taco seasoning and decorate with sprouts or chives.
