A meal for those days when you need something really fulfilling!
Soak dried red (kidney) beans in water overnight!
Cut sweet potatoes lengthwise in two halves and bath them in some coconut or olive oil, salt & spicy flavors (cumin, pepper, paprika, turmeric)!
Now bake them for 30-40 min – until they look yummy golden.
For the filling we just need to cook the beans (45 min), drain them, add
- tomato paste
- spring onion
- bell pepper
- optional: broccoli
…and cook for a few minutes!
For the sauce we just blend
- lemon juice
Feel free to add some cashew cheese on top of everything, like we did on the picture.
